The Flock Cafe & Graindorge

A match made in heaven, or better put it this way: a match made in the pastry kitchen. As of now we'll be featuring (and selling of course!) cakes, puffs, quiches, tartelettes, macarons, and so many more sweet and savory treats from Graindorge Pastry and Catering.
Once upon a time, a young and dynamic French couple fell in love with Cambodia and after lengthy brainstorm sessions and concept evaluations, Graindorge Pastry and Catering was born. Elsa Stetten embarked with her partner on this adventure as the General Manager and given her love for French cuisine and the Cambodian culture, this was bound to be a perfect match. Brian Graindorge is the successful head chef and after working in several high-end establishments in Paris, opening his own enterprise was a dream coming true. Today Brian is using his years of experience to teach and train young Cambodians to become great pastry chefs. Cooking hats off to him; when they start working at Graindorge Pastry and Catering, most of the youngsters have no knowledge of cooking at all.
When it comes to sweet treats, you cannot get more classic French than "Canelés". One of Brian's specialties, this delicious accompaniment to coffee or tea is not well known in Siem Reap (yet!). Looking at it, it seems like a very simple pastry, but baking them and turning them into sweet brown treasures takes experience.
And then there are the mouthwatering choux pastries. Choux, isn't that French for cabbage? Yes, it is. That's because these sweet treats look like tiny cabbages. It's another classical French pastry to die for, especially the chocolate version. Not a chocolate fan? Then indulge in the vanilla choux, made with chantilly and caramelized almond.
For those that are not among Siem Reap's sweet teeth: don't worry! Brian is also specialized in savory canapes. Looking very much like a sweet pastry, the "tarte tomate-basilique" not only satisfies the eye but even more so the taste-buds. Enjoy a delicious pairing of candied tomatoes, zucchini, basil cream, minced tomato, and mustard mousse for lunch, or as a snack to get you through the day, while you're getting work done at The Flock Cafe.
There's one more item that we'd like to highlight. That's the "Verrine Saumon Lentille", a duo of salmon and lentils, served in a jar and topped off with a fresh mint lime mousse. Not your everyday presentation, but a very nice one to post on your Instagram (we love to see you pics, so don't forget to tag us).
Support these artisans and treat yourself to a French delicacy. All of the pastries are home-made, whereby the fruit is locally sourced, but the flour, butter, and cream are of the highest French quality. Baked with passion and love, while teaching a new, Khmer, generation the tricks of the trades. Doesn't that make it even more inviting?
